I always keep a bag of peas in the freezer because it’s the easiest thing to toss into a pasta or salad to up the veggie intake. I almost never, however, just eat peas as a side dish. That has never been enjoyable to me and feels way too much like a microwave tv dinner. That all changed with this dish that I made with a little inspo from chatgpt when I needed a vegetable to round out a meal and it was the only green thing in my entire apartment. It’s bright, it’s pretty, and we demolished it (yes, even my husband who is “not a big fan of peas”).

Start by melting some butter in a pan. Add in minced garlic and about one minute later add in a bunch of frozen peas. Add dried dill (if you have fresh, even better) and lemon pepper. By the time the peas are warmed through, the garlic should be cooked but not burned. Toss with feta and crushed pistachios, sprinkle on some maldon salt, and drizzle with good olive oil.
